| ♦ At a Thai dinner table, guests have individual plates and a fork and a spoon. |
| ♦ Rice is a central to the meal. |
| ♦ Each dinner plate is piled with rice and all the main flavoured dishes are placed in the centre of the table to be sampled in turn. |
| ♦ The order of eating is not important, however, every flavoured dish is shared. |
| ♦ A well balanced dinner, say for 6 people, might have, in addition to the rice, several dishes taken from all parts of the menu. |

| ♦ The soup will include the flavouring, herb and spices, some of which can be ‘woody’ in texture. |
| ♦ Typically, soup is taken in small sips to freshen the mouth before sampling the main dishes. |
| ♦ Thai salad has a sharp, spicy and fresh taste resulting from the seasoning sauce |
| ♦ The essential elements were subtlety modified and refined into a cuisine distinctively Thai, not found anywhere else in the world. |
| ♦ One last word – beware of chillies, they can bite back! If attacked, the best remedy is to eat a lot of plain rice (Water is of little help). |
